Baked Zucchini Pockets
Simple, quick and healthy recipe. You can make it ahead of time and just heat it up a little when ready to serve. It is a great dish to serve at a dinner with friends or for a weekly meal with your family.
My last couple of weeks have been HECTIC. And when I say hectic I mean crazy, running around like a headless chicken kinda madness! On top of my job, getting ready for my BIG Italy trip, recipes and blogging I also attended a 3-day Mybarre instructor training course, of which I will tell you everything in a separate post. So yeah, I was practically out of the house from 7 am till late night. When my life gets this insane I like to meal prep so that I have something ready to eat when I get home.
This dish is one of the thing I prepare and store in my fridge for a few days or in my freezer for a few weeks. It s a balanced meal, with protein, veggies, fats from oil and cheese. To complete it you can serve it with some rice, quinoa, barley or other grains you might like 🙂
Ingredients (serves 2):
- 2 large zucchini, sliced and grilled
- 250 g ground lean pork
- 1/2 small onion, diced
- 1 tsp + 1 tbsp extra virgin olive oil
- 1/4 cup tomato sauce
- 1 cup halved cherry tomatoes
- fresh basil
- Pink Himalaya salt
- Ground black pepper
- 1/4 cup grated mozzarella cheese
- 2 tbsp grated Parmesan cheese
Start off by sauteing the onion in a skillet with 1 tbsp of extra virgin olive oil. When the onion is soft (about 5 min on low heat), add the ground pork, season with salt and pepper and cook on medium until meet is done. Set aside
Take the grilled zucchini and interlace 4 slices as shown in picture
In the center place 2 tbsp of the ground pork, some shredded mozzarella and grated Parmesan cheese Fold the zucchini on top. In a baking dish ladle some tomato sauce, and lay the staffed zucchini pocket.
Halve some cherry tomatoes
and place them next to the zucchini pocket. Sprinkle some Parmesan cheese, add some fresh chopped basil leaves. Drizzle some extra virgin olive oil on top.
and bake in pre-heated oven at 200 C for about 20 min. Let it cool down and serve warm.
