Chocolate Protein Energy Balls
My grab to go snack, high in protein, low in carbs and super chocolaty, these protein energy balls are a life saver for those busy days!
Since I have come back to Italy my schedule has been super hectic. Besides my job with Shanghai which forces me out of bed at 6 am every morning, I am also teaching cooking class at a local cooking school, thus my schedule is packed and there are days where I have no time to cook anything and my lunch is just some fruit, a yogurt a protein shake.
In these days my favorite grab to go snacks are energy balls. I always make a batch when I have some free time and then I store them in my fridge. They keep for a week, are packed with healthy fats, low-glycemic and high in protein. Here on expatcucina I have already posted a few different recipes, today’s one is made with organic chocolate spread, vanilla pump protein, organic coconut oil, almonds and some cold pressed coconut oil.
All you need is a food processor! Let’s get started 🙂
Ingredients (makes 18 balls):
- 2/3 cup activated almonds
- 1/3 cup chocolate cream
- 1/2 cup dry coconut
- 3 dates, pitted
- 1 scoop Tropeaka pump protein powder – vanilla
- 1 tbsp coconut oil
- 1 tbsp chia seeds
- 1 tbsp oat milk (if needed)
- 3 dates
Collect your ingredients
for the chocolate spread I used Alce Nero organic chocolate cream, which does not use any palm oil!
You will also need some coconut oil, go for cold-pressed and if you can also organic one.
Get all the ingredients, minus the oat milk, into a food processor
and blend until creamy, adding the oat milk during the process – only if needed!
Using your hands, form balls
and roll them into some dry coconut
Done! Store your chocolate protein energy balls into an airtight container in your fridge for up to 1 week.
