Coconut Berry Chia Pudding

Quick and healthy to make, this Coconut Berry Chia Pudding will fix your sweet cravings without compromising your diet.

Last recipe from Italy! In 3 sleeps I will be flying back to Shanghai. It’s always a sweet and sour feeling to leave home. I’m sad to leave my family again but I am also excited and happy to go back to my friends and life in Shanghai!



This overnight chia pudding with coconut milk and berries is what I made for my mom and I a few days ago for breakfast. It’s sugar-free, rich in fiber, high in healthy fats and super yummy.

Ingredients (serves 2):

  • 2 cups coconut milk
  • 1/2 c chia seeds
  • 1 cup mixed berries (frozen and thrawn)
  • dry coconut

Stir chia seeds into coconut milk and let it seat overnight

The following morning place 1/4 cup mixed berries and 2/3 of chia pudding into a blender

and process until smooth

Lay the bottom of a glass with the remaining 1/3 of the chia pudding and top it off with the berries blend

Decorate with a little of dry coconut and more berries

Store in your fridge until ready to serve
