Paleo Thumbprint Cookies With Pandan Jam

Paleo thumbprint cookies made with almond flour, coconut oil, and pure maple syrup. This simple and clean cookie recipe is entirely dairy-free, naturally sweetened, and vegan.

There is nothing more like Christmas that calls for cookies. I love baking in general, but this time of the year more than ever. Spending Christmas away from home and my family is not easy, I miss all the big lunches and dinners with relatives and friends – though I do complain about them every time I am home….call it life!

Having been in Europe for over 3 months, this year I have decided to stay in China over the Xmas holiday. I am lucky though cause I have a big and caring group of friends here which is, as a matter of fact, like a family for me. So, yeah, over all I am happy and super grateful to have them in my life.

Back to the cookies, well on Christmas day I hosted some of my closest friends for a Christmas dinner and decided to make some simple Paleo cookies using a green pandan coconut jam!



Healthy, paleo cookies that scream Christmas!

Ingredients:

  • 1-1/4 cup almond flour
  • 1 tbsp tapioca flour
  • 1/4 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1 tbsp maple syrup
  • 1/8 tsp sea salt
  • 7 tbsp coconut oil, melted
  • 1 tsp vanilla extract

Preheat the oven to 160 degrees C and line a baking sheet with parchment paper. In a large bowl whisk together all dry ingredients

Add the maple syrup

Melted coconut oil and vanilla extract

Stir together the ingredients until a wet, crumbly mixture forms

Form a small ball out of the dough, then gently press the center with your thumb (or use the back of a tea spoon), creating a divet. The dough has a tendency to crack, so simply press the larger cracks together. Place thumbprint on the prepared baking sheet and repeat for remaining dough.

Bake for 10 to 12 minutes, until cookies are golden-brown. Remove from the oven and allow cookies to cool completely before touching them (if you touch the cookies before they’re completely cool, they will fall apart).

Once the cookies have cooled, fill up the center of each with some jam. I used pandan coconut jam, cause it’s tasty and GREEN!

You can replace that with your preferred jam flavor or also with some chocolate!

Store your cookies in an airtight container in your fridge for a couple of days.
