Power Me Coconut Coffee
Sweet, creamy and nutritious, this coffee is a real morning booster!
Since the beginning of this month I have started teach MYbarre classes at ZnB Fitness Studio here in Shanghai. I get the 3:20 pm Saturday class AND the (brace yourself) 6:15 am Thursday class.
I have always been a morning person, but found out I am not THAT early of a morning person, if you know what I mean…In order to be in class at 6 I need to be out of bed at 5, since it takes me a good 20 min drive to get to the studio. And, by being the instructor, I need to be smiling and (look) full of energy.
Now, don’t get me wrong, I LOVE teaching MYbarre, and getting certified last December was one of the best things I have ever invested my time in.
To get that extra boost on my 5 am morning, I have come up with this coffee recipe which literally fuels me and gets me ready for class! I make it the night before and heat it up the following morning. But as soon as weather gets warmer, I will be enjoying it cold.
Here is what you need!
Ingredients (makes one large glass):
- 1 inch piece of coconut meat
- 1/2 can coconut water
- 1 tbsp melted coconut oil
- 1/2 tsp ground cinnamon
- 1/8 tsp Himalayan salt
Start off by adding the coconut meat to your blender
then add the coconut oil and coconut water, together with ground cinnamon and salt
brew some organic coffee and pour it into the blender
Process until creamy
and pour into a large glass or cup
enjoy right away or store into your fridge.
