Protein Pancakes with Smoked Salmon and Goat Cheese

Savory energetic breakfast or brunch idea, for those hungy mornings!

For those of you who have been following my blog for a while, you guys know that I have gone from being the classic italian having only cappuccino and brioche for breakfast, to a  more “continental” kind of gal. So yeah, despite my Italian blood, I do now enjoy some rich, savory, filling breakfasts which involve cheese and fish. Oh yes, brace yourselve italians!

Last Saturday I made a filling, savory breakfast for 2, with some protein pancakes, smoked salmon and goat cheese! Basically all of my favorites gathered on one plate.



For the protein pancakes, I used the mixture sold by The Protein Bread Co. in Australia. Sadly they don’t ship (yet) in Asia or Europe, but if you live in the USA or Australia/New Zealand, well you are among the lucky ones that can purchase their amazing gluten-free, low-carb and high-protein line of products.

Let’s brunch now, shall we? 🙂

Ingredients:

  • 3 protein pancakes
  • 100 g smoked salmon
  • 2 tbsp soft goat cheese
  • black pepper
  • 1 tbsp extra virgin olive oil
  • mix of sprouts

well this is not going to be really a tutorial as this recipe is SO simple it takes no skills at all. For the protein pancakes I just followed the instruction on the package, and then I just gathered all the ingredients I needed

and lay them all on a plate. Final touch was a sprinkle of ground black pepper and a drizzle of extra virgin olive oil before serving.

Serve this with a glass of fresh squeezed juice 🙂
