Coconut Cookies (Gluten-Free)

These cookies are now my favorite! I just can’t stop making them and eating them! They are my new addiction. Someone please help me!

Good thing is that they are a quite sin-free treat as they are very low in fats and sugars. They are also gluten-free if you are intolerant.

Give these babies a try please!

Ingredients (18 cookies):

  • 1 cup dry coconut flakes
  • 1/2 cup shredded coconut
  • 2  large egg whites
  • 2 tbsp sugar (optional)
  • 1 tbsp coconut oil

In a bowl combine dry coconut, coconut flakes and sugar (if you are using any)

Give it a stir

Whip up the egg whites until it form stiff peaks

gently incorporate the dry ingredients to it

and at last add the coconut oil. Drop tbsp of dough onto baking paper

and bake at 180 C for about 10-15 min. Let the cookies cool down then serve

  1. I tried making these… started with one egg white, then two, then four, but it was not nearly enough moisture for the flour/coconut mixture. Ended up throwing everything in the garbage and picking a new recipe. Did you mean 1 AND a half cups of flour… or one half cup??

  2. I had the same problem. The mixture was very dry…kept adding more coconut oil, but it didn’t work very well.

    • What type of coconut flour are you using? how big is your egg white? The dough will not be very moisture but just enough to stick together. If you can take pics and email them to me I might be able to help you.
