Spiced Pumpkin Oatmeal Cookies…Trick or Treat?

Today,

because it’s that time of the year…,

because I love pumpkin,

because I love cookies,

and because I love ya!

I made these outrageously tasty Halloween Cookies. No monsters or scary treats, but sweet, spiced pumpkin cookies! I’m going to bring them to my friend’s house party tonight!

Ingredients (makes 30 cookies):

  • 2 cups all-purpose flour
  • 1 1/3 cups rolled oats (not instant)
  • 1 1/4 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon fine salt
  • 1/2 teaspoon ground nutmeg
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 3/4 cup packed dark brown sugar
  • 3/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1-3/4 cup pumpkin purée

for the glaze

  • 1 1/2 cups powdered sugar, sifted
  • 3 tablespoons plus 1 teaspoon milk (not nonfat), plus more as needed
  • 2 tablespoons maple syrup

Pre-heat oven at 180 c (350 F).
In a bowl combine flour and oatmeal

then add the baking powder

cinnamon

nutmeg

ginger

and a pinch of salt. Stir all the dry ingredients together

In a bowl of your electric mixer place the sugars and butter

with a paddle attachment beat on medium speed until lightened in color and fluffy, about 5 minutes. Stop the mixer and scrape down the paddle and the sides of the bowl with a rubber spatula

Add the egg and keep mixing, scrape down the sides of the bowl

With the mixer on low speed, add half of the reserved flour mixture and mix until just incorporated. Add half of the pumpkin and mix until just incorporated.

Repeat with the remaining flour mixture and pumpkin

Drop tablespoon of dough onto baking sheet and bake them for about 12 min

Remove from the oven and let the cookies cool down on a wire rack

Meanwhile prepare the glaze. Now, you need to know that there is some sort of deep conflict between me glazes…they just don’t like me and i NEVER get them to be of the right consistency, so please…whoever of you out there who has got some good advice, drop me a line!

Thanks…back to the glaze, just place all of the ingredients in a medium bowl and whisk until evenly combined

and drizzle it over the cookies in a zigzag pattern. Let the cookies sit at room temperature until the glaze has set, about 20 minutes
